Polish pork sausage from Dukla granted EU protected geographical indication

The Polish product “Kiełbasa pradziada z Dukli” has been entered into the European Union’s Register of Protected Geographical Indications (PGI). The sausage is made from the meat and liver of Puławska pigs or their crossbreeds, and is distinguished by its very low fat content, large pieces of liver and traditional smoking using specially selected wood.

The European Commission’s decision means that the name “Kiełbasa pradziada z Dukli” is now protected throughout the European Union.

It is the 51st Polish product to receive protection under the EU quality scheme. This status confirms the product’s distinctive characteristics and its connection to its place of origin.

“Kiełbasa pradziada z Dukli” is made from the meat and liver of Puławska pigs or their crossbreeds.

The product has a traditional wreath shape and is characterised by a very low fat content of no more than 5%.

One of the main features of the recipe is the combination of ham with large pieces of liver, which gives the finished product its distinctive texture.

The smoking method is another important part of the production process.

Only beech and alder wood are used, with the addition of sweet cherry or sour cherry wood.

This particular combination gives the sausage its characteristic flavour, aroma and appearance.

PGI status protects the product name from misuse and highlights its regional identity. At the same time, the inclusion of another meat product in the EU quality scheme strengthens the position of traditional Polish products on the European market.
